Sri Lankan Fish Ambul Thiyal (Sour Fish Curry) in 5 minutes:
Ingredients:
Fish
Turmeric powder: 1 tsp
Black pepper powder: 1/2 tsp
Dried goraka (or tamarind): 1-2 pieces
Garlic: 4-5 cloves
Cinnamon stick: 1 small piece
Curry leaves: 1 sprig
Green chilies: 2-3
Salt to taste
Water: 1/2 cup
Lime juice: 1 tbsp
Method:
Prepare the fish: Cut the fish into pieces (about 5-6 pieces depending on size) and set aside.
Make the curry paste: In a small bowl, mix turmeric powder, black pepper, and a bit of water to make a paste.
Cook the spices: In a pan, heat a little oil. Add garlic, cinnamon stick, curry leaves, and green chilies. Stir fry for a few seconds.
Add the fish and spices: Add the fish to the pan, followed by the turmeric and pepper paste. Stir well to coat the fish evenly.
Add goraka and water: Add dried goraka (or tamarind) and water. Let it simmer for 5 minutes until the fish is cooked and the curry thickens slightly.
Finish with lime juice: Add lime juice and stir. Taste for seasoning and adjust salt if needed.
